Calzone Dough

1 Tbsp sugar
approx 1 cup warm water (110F.)
1 envelope yeast
3 1/4 cups flour
1 tsp salt
1/4 cup olive oil

Add yeast, sugar and 1/4 cup of the water to a small bowl and let set 5 minutes. Add flour, salt, oil and the rest of water along with yeast mixture and mix well. Turn out onto a floured board and knead dough until smooth and satiny (about 10 minutes).

1/4 lb. bacon
3 Tbsps oil
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup finely chopped carrot
16 oz. can tomatoes with juice
1 19-oz can cannelloni beans
4 cups chicken broth
1/2 tsp salt
1/4 tsp pepper
1 1/4 cups small elbow macaroni

Tarragon pasta salad

More tarragon

8 ounces bow-tie pasta, cooked and drained
9 ounces tuna in water, canned, drained and flaked
1/3 cup chopped red bell pepper
1/4 cup sliced green onions
3/4 cup mayonnaise
4 teaspoons minced fresh tarragon
2 teaspoons lemon juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper

White Fish with Tamarind Mint

Serves: 4-6

2 tablespoons tamarind pulp, soaked in 3/4 cup warm water, squeezed and strained
4 tablespoons fish sauce
3 tablespoons sugar
1 teaspoon light soy sauce
1-1/2lbs white fish fillets (snapper or bream), cut in 4 serving pieces, bones remove
1/2 teaspoon freshly ground black pepper
1/3 cup cornflour
3 tablespoons vegetable oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1 large red chili, minced
2 tablespoons minced fresh mint

Homemade Deep Dish Pizza Dough

m456.jpgBread machine yeast, in a packet, is fine. The mixture of flours is the counsel of perfection - omitting the semolina and bulking up accordingly is also OK.

2 cups warm water (110° - 115°)
5 tsp yeast
1 Tbsps sugar
1/3 C. oil
2 t. salt
3 Tbsps semolina flour
1 cup all-purpose flour
5 to 6 cups bread flour

Add 1/4 C. of the water to the yeast and sugar. Let set 5 minutes; the yeast should start to bubble. Add flours, salt, oil and yeast mixture to a large bowl and mix well. Place dough onto a floured board and knead until the dough is smooth and satiny. (about 10 minutes) Let rise until doubled in a covered, greased bowl.

Hot and Sour Soup Recipe

Use a variety of mushrooms,eg. crimini, button, portobello, oyster, shiitake. Use lean pork and remove any visible fat.
Serves: 8

4 ounces mushrooms, sliced
2 cloves garlic, minced
1/2 teaspoon fresh ginger, minced
1/4 cup green onions, sliced
1 pound pork tenderloin, sliced thin
3 tablespoons vegetable oil
8 ounces water chestnuts, canned, sliced and drained
8 ounces bamboo shoots, canned, sliced and drained
42 ounces chicken broth
1/4 teaspoon crushed red pepper
2 teaspoons chili sauce
2 teaspoons soy sauce
1 tablespoon Worcestershire sauce
2 teaspoons sesame oil
2 tablespoons apple cider vinegar

1 large onion, thinly sliced
1 small carrot, cut into small dice
1 large celery stalk, finely chopped
2oz butter
1oz flour
2 level teaspoons curry powder
1-1/2 pints chicken broth
1 large cooking apple
2 teaspoon lemon juice
1/3 cup cooked rice
1/2 cup cooked chicken meat
Salt and pepper to taste
4 tablespoons fresh heavy cream, warmed
