Eggs Benedict is a cholesterol-filled feast that’s fun for the whole family, if they don’t mind minor details like early death.
Eggs Benedict consists of English muffins topped with smoked bacon or ham (traditionally Canadian or back bacon), poached eggs, and hollandaise sauce. Substituting the ham or bacon with shrimp or crab is a popular variant.
The problem with Eggs Benedict is getting everything to arrive together. The Hollandaise sauce is also a little difficult to thicken properly without splitting.
Eggs Florentine is another common variation - replace the bacon with sauteed spinach.
Eggs Blackstone is another common variant, substituting streaky bacon for back bacon, and adding a tomato slice.
A version of Artichokes Benedict has been created for the South Beach Diet, substituting cooked fresh artichokes for the muffins and using a mock hollandaise sauce to create a breakfast that is lower in carbohydrates and cholesterol.
Southern Style is another variation in which country gravy is substituted for hollandaise, and biscuits for the English muffins. Canadian bacon, ham, or regular bacon is used along with sunny side up eggs.
