Homemade Couscous
Well, “homemade” isn’t entirely true here - with the arrival in stores of ready prepared couscous in a packet, there’s no need to go to all the trouble of a steamer etc, and the results are as good, if not a bit better.
Couscous is a perfect, healthy way of getting some carbohydrate into the meal, quicker than peeling potatoes and makes a change from pasta 3 times a week…
As a start, try these recipes:
Shrimp couscous
Nutty couscous
There’s any number of variations that can be made on the standard couscous recipe, but the basic cold salad method is this:-
Couscous Salad with Mint
10oz couscous
2 cups boiling water
1/2 cucumber, chopped
2 tomatoes, diced
3 green onions, sliced
1/2 cup parsley,chopped
1/4 cup chopped fresh mint
Dressing ingredients:
1/3 Cup olive oil
2 Tbsps lemon juice
1/2 teaspoon ground coriander (cilantro)
1/4 teaspoon ground cumin
1/8 teaspon black pepper
Pour hot water over couscous in a large bowl - the grains will swell to at least double the original size. Cover and stand for ten minutes until water is absorbed. Add remaining ingredients.
Mix the dressing ingredients. Pour over salad and refrigerate for at least an hour - will serve 6.
