Baked Apple Pancake

Serve with maple syrup.

Serves: 4-6


Ingredients

1 cup whole milk
4 large eggs
3 Tbsps sugar
1 tsp vanilla extract
1/2 tsp salt
1/4 tsp ground cinnamon
2/3 cup all purpose flour
1/2 stick unsalted butter
3/4 lbs Golden Delicious apples (about 2 large apples), peeled, cored, thinly sliced
3 Tbsps packed light brown sugar
Confectioner's sugar


Method

  1. Preheat oven to 425F.
  2. Place butter in a 13 x 9-inch glass baking dish. Place dish in oven until butter melts. Remove dish from oven.
  3. Arrange apple slices in overlapping rows over the melted butter in baking dish. Bake apples until butter is bubbling and apples soften slightly and brown around the edges (around 10 minutes).
  4. While apples are baking, whisk the first six ingredients in a large bowl until well blended. Add flour and whisk until smooth.
  5. When apples are ready, gently pour the batter over the apples and sprinkle with brown sugar. Bake until pancake is puffed and brown (20-25 minutes). Remove from oven and sprinkle with confectioner's sugar.
