Apricot Oatmeal Cookies

Ingredients

3/4 cup butter or regular margarine, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 cup flour
1 tsp baking soda
2 1/2 cups rolled oats
1 2/3 cups (10 ounces) white chips
3/4 cup dried apricots, chopped


Method

  1. Preheat oven to 375F.
  2. Beat butter, granulated sugar, and the brown sugar in a large bowl until fluffy. Add the egg. Beat well.
  3. Add the flour and the baking soda and beat until well blended. Stir in the oats, white chips, and apricots.
  4. Loosely form rounded teaspoonfuls of dough into balls. Place on ungreased cookie sheet.
  5. Bake for 7 to 9 minutes or just until lightly browned. Do not overbake. Cool slightly.
  6. Remove from cookie sheet to wire rack. Cool completely.
