Apricot Oatmeal Cookies

Ingredients
3/4 cup butter or regular margarine, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 cup flour
1 tsp baking soda
2 1/2 cups rolled oats
1 2/3 cups (10 ounces) white chips
3/4 cup dried apricots, chopped
Method
- Preheat oven to 375F.
- Beat butter, granulated sugar, and the brown sugar in a large bowl until fluffy. Add the egg. Beat well.
- Add the flour and the baking soda and beat until well blended. Stir in the oats, white chips, and apricots.
- Loosely form rounded teaspoonfuls of dough into balls. Place on ungreased cookie sheet.
- Bake for 7 to 9 minutes or just until lightly browned. Do not overbake. Cool slightly.
- Remove from cookie sheet to wire rack. Cool completely.
