Asparagus Apple And Chicken Salad

Add some toasted garlic bread and on a hot day you have a nice main dish salad with little clean-up and no cooking except for toasting the bread.

Ingredients

1 cup fresh Asparagus, cut into 1" pieces
2 Tbsps Cider Vinegar
2 Tbsps Olive Oil
2 tsps Honey
2 tsps snipped fresh Parsley
1/2 tsp Salt
1/4 tsp Pepper
1 can White Chicken Meat, drained
1/2 cup diced Red Delicious Apple
2 cups torn Salad Greens


Method

  1. Cook asparagus in small amount of water until crisp-tender, 3-4 minutes; drain and cool.
  2. In a bowl, combine the next 6 ingredients, better done in blender for good mixing, set aside.
  3. Stir together torn greens, chicken, apple and asparagus; toss together gently until well blended.
  4. Arrange on two pretty salad plates. Drizzle half of dressing over each salad.
