Asparagus and Ham Linguine
Serves: 4
Ingredients
1 lb linguine
1 lb asparagus, cut in 2" pieces
1 Tablespoon butter
2 cloves garlic, minced
1 1/2 cups whipping cream
1/2 cup smoked ham, diced
2 Tablespoons lemon juice
Lemon zest
1/4 cup fresh parmesan cheese, grated
1 Tablespoon chives, chopped
Salt and pepper to taste
Method
- Cook linguine in a large pot of boiling water for 5 minutes. Add asparagus and continue to cook another few minutes until paste is al dente. Drain well.
- Meanwhile, heat butter in a saucepan over medium heat, add garlic and saute for 1 minute.
- Add cream, lemon zest and ham; boil gently for about 8-10 minutes sitrring occasionally until slightly thickened. Stir in lemon juice and parmesan cheese.
- Toss sauce with pasta and asparagus. Stir in chives and season to taste with salt and pepper.
