Baby Carrots In Orange Sauce

This dish goes with just about any entree. Its a favorite at get- togethers and is sure to get finicky kids to eat their vegetables.

Ingredients

4 cups baby carrots
2 cups orange juice
1 cup water
1/4 cup butter or margarine
1/3 cup brown sugar
1-1/2 tablespoons cornstarch


Method

  1. In medium saucepan, combine orange juice and water and bring to a boil.
  2. Add butter and brown sugar. Add carrots, cover and cook on medium for about 10 minutes or until carrots are tender crisp.
  3. Mix cornstarch with 2 tablespoons water and add to saucepan. Cook until sauce thickens.
  4. Serve carrots, spooning orange sauce on top.
