Baked Apple Compote
Serves: 6-8
Ingredients
2 pounds (6 to 8) apples
3 tablespoons fresh lemon juice
2 tablespoons mild-flavored honey
1/4 cup unsweetened apple juice
1 stick cinnamon
1/2 teaspoon ground allspice
1/4 to 1/2 teaspoon freshly grated nutmeg
1/2 teaspoon vanilla extract
2 tablespoons dried currants
1/2 cup plain low-fat yogurt for topping (optional)
Method
- Preheat the oven to 350 degrees.
- Lightly butter a 2-quart baking dish. Peel, core, and slice the apples. Toss with the lemon juice in the prepared baking dish. Add the remaining ingredients except yogurt and toss together.
- Bake in the preheated oven for 45 minutes to 1 hour. Serve warm or at room temperature, topped with plain low-fat yogurt.
