Baked Apple Compote

Serves: 6-8


Ingredients

2 pounds (6 to 8) apples
3 tablespoons fresh lemon juice
2 tablespoons mild-flavored honey
1/4 cup unsweetened apple juice
1 stick cinnamon
1/2 teaspoon ground allspice
1/4 to 1/2 teaspoon freshly grated nutmeg
1/2 teaspoon vanilla extract
2 tablespoons dried currants
1/2 cup plain low-fat yogurt for topping (optional)


Method

  1. Preheat the oven to 350 degrees.
  2. Lightly butter a 2-quart baking dish. Peel, core, and slice the apples. Toss with the lemon juice in the prepared baking dish. Add the remaining ingredients except yogurt and toss together.
  3. Bake in the preheated oven for 45 minutes to 1 hour. Serve warm or at room temperature, topped with plain low-fat yogurt.
