Banana-oatmeal Bars

Ingredients
1 1/2 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/2 cup soft butter
1 cup brown sugar
1 egg
1 cup mashed bananas (about 3 medium)
1 teaspoon vanilla
1 1/2 cups raw, quick-cooking oats
3/4 cup (total) chopped nuts, raisins, & dates (optional)
Method
- Preheat oven to 425F. Grease and flour 13x9 inch baking pan.
- Sift together: flour, salt, soda and spices, set aside.
- In large bowl, beat until light and fluffy: butter, sugar, egg. Add bananas and vanilla beat until smooth.
- Gradually stir in flour mixture and oats until well combined. (If it seems to be getting a little thick, slowly add about 1/4 cup non-fat milk as needed.) Stir in nuts etc.
- Bake until golden - about 25 minutes.

this is good. As a diabetic i reduced the amount of sugar added and replaced that with the equivalent diabetic sweetner product. It did reduce the vibrancy of the bars but gave me a good treat which is both low in sugars and is lower glycaemic index than other bars.
