Banana-oatmeal Bars

Ingredients

1 1/2 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/2 cup soft butter
1 cup brown sugar
1 egg
1 cup mashed bananas (about 3 medium)
1 teaspoon vanilla
1 1/2 cups raw, quick-cooking oats
3/4 cup (total) chopped nuts, raisins, & dates (optional)


Method

  1. Preheat oven to 425F. Grease and flour 13x9 inch baking pan.
  2. Sift together: flour, salt, soda and spices, set aside.
  3. In large bowl, beat until light and fluffy: butter, sugar, egg. Add bananas and vanilla beat until smooth.
  4. Gradually stir in flour mixture and oats until well combined. (If it seems to be getting a little thick, slowly add about 1/4 cup non-fat milk as needed.) Stir in nuts etc.
  5. Bake until golden - about 25 minutes.

this is good. As a diabetic i reduced the amount of sugar added and replaced that with the equivalent diabetic sweetner product. It did reduce the vibrancy of the bars but gave me a good treat which is both low in sugars and is lower glycaemic index than other bars. Thanks for this I would love to share other dibetic recipes with other members. I am based in the UK and some products listed in recipes are not available here, would anyone discuss these with me so that I can develop my range of recipes? i am new to this site and dont know how anyone can contact me? I will check on this review at times to see if there is any interest in helping me. Thanks for this recipe, whoever takes all their time to make this available is a good person. best wishes Nigel
