Basmati Pilaf

Ingredients
1 tbsp Canola oil
1-3 inch Cinnamon stick; halved
2 whole cardamom pods
1/4 cup onions, thinly sliced
2 whole Cloves
1 cup Basmati rice
1 tsp salt
1 1/2 cup water
Method
- Heat oil in medium saucepan over high heat until almost smoking. Add whole spices and cook, stirring until they pop. Add onions, and cook stirring until translucent, about 2 minutes.
- Stir in rice and cook, stirring until fragrant, about 1 minute. Add 1 1/2 cups water and salt; bring to boil. Reduce heat, cover tightly and simmer until all water has been absorbed, about 25 minutes.
- Let stand, covered at least 10 minutes, fluff with fork, and serve.
