Basmati Pilaf

Ingredients

1 tbsp Canola oil
1-3 inch Cinnamon stick; halved
2 whole cardamom pods
1/4 cup onions, thinly sliced
2 whole Cloves
1 cup Basmati rice
1 tsp salt
1 1/2 cup water


Method

  1. Heat oil in medium saucepan over high heat until almost smoking. Add whole spices and cook, stirring until they pop. Add onions, and cook stirring until translucent, about 2 minutes.
  2. Stir in rice and cook, stirring until fragrant, about 1 minute. Add 1 1/2 cups water and salt; bring to boil. Reduce heat, cover tightly and simmer until all water has been absorbed, about 25 minutes.
  3. Let stand, covered at least 10 minutes, fluff with fork, and serve.
