Beaufort Stew

Ingredients
3 ounce powdered fish broth
2 or 3 cloves fresh garlic, crushed, peeled
2 1/2 pounds smoked link sausage
12 ears corn, husks and silks removed
4 lbs fresh shrimp, unpeeled
Method
- Fill a very large kettle with enough water to cover all ingredients. Add broth powder; boil for 10 to 15 minutes.
- Add garlic. Cut sausage in about 2-inch lengths; add to water. Boil for 25 to 30 minutes.
- Break ears of corn in half; add to kettle; boil 10 minutes. Add shrimp; boil 5 more minutes.
- Drain and serve immediately with sauce and clarified butter for dipping.
