Blueberry Muffins

Ingredients
2 Apples - Medium
2 Carrots - Medium
2 Bananas - Medium
400g fresh or frozen Bluberries
4 Cups Wholemeal Flour
2 Cups Shredded Coconut
1 Cup Walnuts
1 Teaspoon Baking Powder
1 1/2 Cups Vegetable Oil
2 Cups Brown Sugar
5 Eggs
Method
- Grate Apples, Carrots and Bananas and mix with Blueberries. Mix all dry ingredients together.
- Mix remaining ingredients in a separate bowl. Add dry ingredients and mix thoroughly.
- Fold in blueberries and grated ingredients. Grease muffin tins and fill with mixture. The filling should be approximately 1cm above the rim of the tin.
- Bake in a pre-heated oven at 170C for 45 minutes.
