Blueberry Muffins

Ingredients

2 Apples - Medium
2 Carrots - Medium
2 Bananas - Medium
400g fresh or frozen Bluberries
4 Cups Wholemeal Flour
2 Cups Shredded Coconut
1 Cup Walnuts
1 Teaspoon Baking Powder
1 1/2 Cups Vegetable Oil
2 Cups Brown Sugar
5 Eggs


Method

  1. Grate Apples, Carrots and Bananas and mix with Blueberries. Mix all dry ingredients together.
  2. Mix remaining ingredients in a separate bowl. Add dry ingredients and mix thoroughly.
  3. Fold in blueberries and grated ingredients. Grease muffin tins and fill with mixture. The filling should be approximately 1cm above the rim of the tin.
  4. Bake in a pre-heated oven at 170C for 45 minutes.
