Buffalo Stew
Serve with hot buttered cornbread.
Serves: 6
Ingredients
1/2 lb Italian link Sausage
1 lb ground Buffalo
1 onion, finely chopped
1/2 tsp ground cayenne pepper
2 tsps bottled steak sauce
3 cans (1 lb each) stewed tomatoes
1 pkg (9 oz) frozen Italian green beans, partly thawed
1 pkg (9 oz) frozen whole kernel corn, partly thawed
2 cans (1 lb each) whole potatoes, drained
1 tsp salt
1 tsp ground black pepper
2 Tbsps flour (or cornstarch)
Method
- Brown sausages in a large frying pan; push to one side.
- While sausages brown, mix onion and ground cayenne pepper with buffalo meat and shape into 12 balls; flatten each slightly. Brown on one side in same pan; turn. Brush meat patties with steak sauce, pour tomatoes over, add green beans, corn and potatoes. Sprinkle with salt and ground black pepper; cover.
- Cook 20 minutes or until beans and corn are tender. Smooth flour (or cornstarch) and cold water to a paste; stir into meat mixture. Cook, stirring occasionally, until gravy thickens and boils for a minute or two.
