Cherry Pudding

Ingredients

2 cups sifted flour
2 teaspoons baking powder
1-1/3 cups sugar
Pinch of salt
2/3 cup milk
2 tablespoons melted unsalted butter
2-1/2 cups pitted and drained red cherries, fresh, canned, or frozen, juice reserved
2 tablespoons unsalted butter
2-2/3 cups hot water or cherry juice and water
Whipped cream or ice cream (optional)


Method

  1. Preheat oven to 375 degrees F.
  2. Sift flour, baking powder, half the sugar, and salt together in a bowl. Add milk and melted butter; stir until smooth. Spread evenly in an 8-1/2 x 3-1/2-inch round baking dish; arrange the cherries on top.
  3. Combine the hot liquid with the remaining sugar and butter; bring to a boil. Pour over the cherries and immediately put into the oven. Bake until cherries rise to the surface and pudding has puffed up and absorbed a good portion of the cherry liquid, about 60 minutes. Serve warm with whipped cream or ice cream if desired.
