Cherry Pudding

Ingredients
2 cups sifted flour
2 teaspoons baking powder
1-1/3 cups sugar
Pinch of salt
2/3 cup milk
2 tablespoons melted unsalted butter
2-1/2 cups pitted and drained red cherries, fresh, canned, or frozen, juice reserved
2 tablespoons unsalted butter
2-2/3 cups hot water or cherry juice and water
Whipped cream or ice cream (optional)
Method
- Preheat oven to 375 degrees F.
- Sift flour, baking powder, half the sugar, and salt together in a bowl. Add milk and melted butter; stir until smooth. Spread evenly in an 8-1/2 x 3-1/2-inch round baking dish; arrange the cherries on top.
- Combine the hot liquid with the remaining sugar and butter; bring to a boil. Pour over the cherries and immediately put into the oven. Bake until cherries rise to the surface and pudding has puffed up and absorbed a good portion of the cherry liquid, about 60 minutes. Serve warm with whipped cream or ice cream if desired.
