1 1/2 tablespoons sherry
3/4 teaspoons freshly grated ginger
1 1/2 pounds boneless chicken
1 pound broccoli, cut in 1" pieces
7 tablespoons peanut oil, divided
1/2 cup sliced green onions
1 large clove garlic, crushed and finely chopped
1 1/2 cups coarsely chopped cashews

  3. Drain, rinse under cold water. Dry.
  4. Assemble all ingredients on a prep tray near the stove. Heat 4 tablespoons oil in a wok or large skillet.
  5. Add green onions, garlic and cashews; cook and stir 3 minutes. Transfer mixture to a small bowl.
  6. Heat remaining oil in a wok. Add chicken mixture; stir-fry 6 minutes, or until chicken is opaque.
  7. Stir in nut mixture and broccoli. Toss until hot. Serve with rice.
