Chicken with Yoghurt and Mint
Simply done - preparation and cooking in 35 minutes. Serve with rice and salad leaves.
Serves: 4
Ingredients
4 chicken breasts
1 lemon
1 tablespoon honey
2 tablespoons low-fat yoghurt
4 tablespoons chopped mint
Salt & pepper
Method
- Mix together lemon juice, honey, yoghurt, mint, salt and pepper.
- Cut chicken into strips, then loosely wrap in a foil parcel, moisten and bake in oven for 30 minutes, to steam lightly.
