Chocolate Peanut Cookies
Don't overcook - these cookies should be slightly soft and chewy in the center.
Serves: 4-6
Ingredients
2/3 cup unsalted butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup cocoa
1/2 teaspoon baking soda
1 teaspoon salt
1 cup semisweet chocolate chips
1/2 cup Spanish peanuts
Method
- Preheat oven to 350F.
- Combine butter and sugar using an electric mixer; beat until light and creamy. Add eggs and vanilla, continue to beat for 2 minutes.
- In a separate bowl, stir together flour, cocoa, baking soda and salt. Gradually stir the flour mixture into the butter mixture. Stir in chocolate chips and nuts.
- Drop by tablespoonfuls onto a baking sheet, leaving 2 inches between each mound of dough.
- Bake until set, 10 to 12 minutes. Let cool for several minutes on baking sheets before transferring to a wire rack.
