Christmas Oatmeal Cookies
Serves: 4 doz cookies
Ingredients
1/2 cup raisins
1/2 cup shortening
1 cup sugar
2 eggs
1/2 cup milk
1 tsp Vanilla
1/2 cup dates, chopped fine
1/4 cup Maraschino cherries, chopped fine
1/2 cup walnuts, chopped fine
1 cup flour
1/2 tsp salt
2 tsp baking powder
1/2 cup Fruit cake mix
2 cups rolled oats
Method
- Soak raisins in hot water; drain well.
- Cream shortening. Add sugar, eggs, milk and vanilla; beat until creamy.
- Put fruit and nuts in a bowl. Sprinkle a little flour on the fruit and nuts; mix until all are separated.
- Add salt and baking powder to remaining flour; add flour and cake mix to shortening mixture.
- Add fruit and nuts and rolled oats; mix well.
- Drop by spoonfuls on a greased cookie sheet. Bake at 375 for about 20 minutes.
