Classic Bruschetta
Serves: 2
Ingredients
2 tomatoes, peeled, seeded, and finely diced
4 anchovy fillets (2 of them finely chopped)
2 salted capers, rinsed, dried, and roughly chopped
1 garlic clove, finely chopped
2 fresh basil leaves, torn in small pieces
1/4 teaspoon dried oregano
2 thick slices country bread
Freshly-ground black pepper
Salt, if necessary
2 tablespoons extra-virgin olive oil
Method
- Place the diced tomato, the finely chopped anchovies, and the capers in a bowl. Add the garlic, basil, and oregano. Season with pepper and with salt if necessary (the salt in the anchovies might be sufficient). Stir in the extra virgin olive oil.
- Toast the bread and spread the tomato mixture and top with remaining anchovies.
