Classic Bruschetta

Ingredients

2 tomatoes, peeled, seeded, and finely diced
4 anchovy fillets (2 of them finely chopped)
2 salted capers, rinsed, dried, and roughly chopped
1 garlic clove, finely chopped
2 fresh basil leaves, torn in small pieces
1/4 teaspoon dried oregano
2 thick slices country bread
Freshly-ground black pepper
Salt, if necessary
2 tablespoons extra-virgin olive oil


Method

  1. Place the diced tomato, the finely chopped anchovies, and the capers in a bowl. Add the garlic, basil, and oregano. Season with pepper and with salt if necessary (the salt in the anchovies might be sufficient). Stir in the extra virgin olive oil.
  2. Toast the bread and spread the tomato mixture and top with remaining anchovies.
