Classic Maine Lobster Rolls

Serve with potato chips and bread & butter pickle slices.

Ingredients

1 top-split hot dog roll per serving
1 tablespoon butter
4-6 ounces cooked lobster meat per roll, roughly chopped in large chunks
mayonnaise
paprika (optional)
shredded iceberg lettuce


Method

  1. Spread butter on both sides of the hot dog roll. Grill the empty hot dog roll in plenty of butter till golden on both sides.
  2. While the roll is grilling, mix the lobster with barely enough mayonnaise to moisten. Pile lobster into the warm roll.
  3. Garnish with a shake of paprika, and top with a small amount of shredded lettuce.
