Crab Frittata

Serves: 4


Ingredients

4 tablespoons butter
1 zucchini, sliced
1 red bell pepper, chopped
1/2 cup chopped leek
1 cup crabmeat, cooked or canned
6 eggs beaten
Salt and freshly ground pepper
1/2 cup grated cheddar cheese
3 tablespoons chopped fresh parsley


Method

  1. Melt 2 tablespoons butter in frying pan over medium heat. Add zucchini, pepper and leek and cook until tender, about 5 minutes. Cool. Place in large bowl with crabmeat, eggs, salt and pepper to taste.
  2. Preheat broiler. Melt remaining 2 tablespoons butter in frying pan with heat-proof handle over medium heat. Pour in egg mixture and cook until bottom sets, about 6 to 8 minutes. Sprinkle with cheese and parsley. Broil until top sets and is golden brown.
