Cranberry Chicken

Simplicity - I've used it for dinner parties and it takes away a lot of the stress

Serves: 4-6


Ingredients

6 bone in chicken breasts with or without skin (or boneless if you prefer)
1 bottle of Catalina dressing
1 16 oz. can of whole cranberries
1 clove (or more) of garlic, chopped fine
1/2 teaspoon fresh ground pepper
fresh parsley


Method

  1. Preheat oven to 350 degrees.
  2. Combine the entire bottle of Catalina dressing with the entire can of cranberries, add the garlic and the pepper, mix well. Arrange chicken breasts in an 8 x 11 or some such size baking dish. Pour cranberry mixture over the chicken and cover with tin foil.
  3. Bake for 45 min to 1 hr, depending on whether you used bone in or boneless breasts - bone in take longer - remove tin foil for last 15 minutes of baking.
  4. When serving, spoon sauce in dish over chicken and sprinkle with fresh parsley.
