Cranberry Chicken
Simplicity - I've used it for dinner parties and it takes away a lot of the stress
Serves: 4-6
Ingredients
6 bone in chicken breasts with or without skin (or boneless if you prefer)
1 bottle of Catalina dressing
1 16 oz. can of whole cranberries
1 clove (or more) of garlic, chopped fine
1/2 teaspoon fresh ground pepper
fresh parsley
Method
- Preheat oven to 350 degrees.
- Combine the entire bottle of Catalina dressing with the entire can of cranberries, add the garlic and the pepper, mix well. Arrange chicken breasts in an 8 x 11 or some such size baking dish. Pour cranberry mixture over the chicken and cover with tin foil.
- Bake for 45 min to 1 hr, depending on whether you used bone in or boneless breasts - bone in take longer - remove tin foil for last 15 minutes of baking.
- When serving, spoon sauce in dish over chicken and sprinkle with fresh parsley.
