Curried Chicken And Mango Salad
Substitute pineapple or papaya for the mango, or maybe walnuts for the almonds.
Serves: 4
Ingredients
2 qts water
4 boned and skinned chicken breast halves
1/8 lb mayonnaise
3/4 cup plain yogurt
1 Tbsp lime juice
1 Tbsp honey
1 Tbsp curry powder
1/8 tsp salt
1/2 tsp pepper
1 cup mango, cubed
1/4 cup celery
4 lettuce leaves
1/2 cup seedless grapes halved
1/4 cup almond slivers
Method
- Bring water to a boil in a medium saucepan. Add chicken. Reduce heat and simmer 15 min or until chicken is tender. Remove chicken and let cool.
- Cut into 1/2 in. pieces and set aside.
- Combine yogurt, lime juice, honey, curry powder, salt and pepper in a medium bowl. Mix well.
- Add mango and reserved chicken. Toss well.
- Spoon salad onto lettuce lined individual serving plates.
