1 pound ground beef, or pork, or a mixture of the two
1 small onion, chopped
1/2 cup rice
Salt and pepper, to taste
2 green peppers
2 cups tomato juice
- Mix ground meat, onion, egg, rice and seasonings together until well mixed.
- Cut peppers in half lengthwise and discard stem and seeds. Fill peppers with meat mixture and place in crock pot.
- If you have extra meat mixture, just shape into balls and put in crock pot with peppers. Cook in crock pot on low 6 to 8 hours.
- You can thicken the tomato juice with cornstarch and water if desired and serve over peppers.
