Ginger Scones
Serves: 8 scones
Ingredients
1 1/4 cups all-purpose flour
1 tablespoon sugar
2 teaspoons pasteurized dried egg whites
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup nonfat vanilla yogurt
1 tablespoon minced crystallized ginger
Method
- Preheat oven to 425 degrees F.
- Coat a non-stick baking sheet with cooking spray. In a large mixing bowl, sift all but 1 tablespoon of the flour, the sugar, egg whites, baking powder, soda, and salt. Mix well.
- In a small bowl, combine the yogurt and ginger. Add the wet ingredients to the dry ingredients, and stir until just combined. Sprinkle the remaining tablespoon of flour onto a work surface and turn out the dough. Flip it over once so that the flour will coat both sides. Lightly pat the dough into a 12-inch circle and cut the circle into eight wedges. Transfer them with a spatula onto the baking sheet. Bake the scones for 12 to 15 minutes, or until golden brown.
