Greek-style Strata

Ingredients
3 Whole-wheat Pita Bread, cut into 6ths
1 cup Cottage Cheese
1 cup Milk
2 Tbsps Flour
4 Eggs
3 Ozs Feta Cheese, crumbled
1/2 cup Frozen Peas
4 Scallions, sliced
1/2 cup Dill
1/4 cup Mint
1 Tsp Lemon Zest
Salt and Pepper, to taste
1 Med Tomato, thinly sliced
Method
- Preheat oven to 350F.
- Toast pita until lightly crisp, about 5 minutes.
- Combine cheese and milk in food processor bowl until smooth. Transfer to medium bowl. Stir in flour, eggs, feta, peas, onions, dill, mint, lemon zest, salt and pepper.
- Place pitas in greased 12x8 baking dish. Pour egg mixture over. Let stand 10 minutes. Spread tomato slices over top and bake 35 minutes or until custard is set.
