Greek-style Strata

Serves: 6


Ingredients

3 Whole-wheat Pita Bread, cut into 6ths
1 cup Cottage Cheese
1 cup Milk
2 Tbsps Flour
4 Eggs
3 Ozs Feta Cheese, crumbled
1/2 cup Frozen Peas
4 Scallions, sliced
1/2 cup Dill
1/4 cup Mint
1 Tsp Lemon Zest
Salt and Pepper, to taste
1 Med Tomato, thinly sliced


Method

  1. Preheat oven to 350F.
  2. Toast pita until lightly crisp, about 5 minutes.
  3. Combine cheese and milk in food processor bowl until smooth. Transfer to medium bowl. Stir in flour, eggs, feta, peas, onions, dill, mint, lemon zest, salt and pepper.
  4. Place pitas in greased 12x8 baking dish. Pour egg mixture over. Let stand 10 minutes. Spread tomato slices over top and bake 35 minutes or until custard is set.
