Grilled Zucchini
Serves: 6
Ingredients
3 Large Zucchini cut into 1/2-inch-thick slices
3 Tablespoons Olive oil
2 Tablespoons chopped fresh oregano or 2 teaspoons dried
2 Garlic cloves, minced
1 teaspoon chopped fresh rosemary or pinch of dried
Method
- Prepare barbecue (medium-high heat) or preheat broiler.
- Brush zucchini with olive oil. Sprinkle both sides of zucchini with oregano, garlic and rosemary. Season zucchini slices generously with salt and pepper.
- Grill or broil until zucchini is tender, about 4 minutes per side.
