Herb Foccacia

Ingredients
2 pkgs active dry yeast
1/4 tsp sugar
1 cup warm water (between 110 and 115F)
3 cups all-purpose flour
1/4 cup finely chopped onion
3 Tbsps vegetable oil
1 tsp salt
Herb Glaze
Method
- Mix yeast, sugar and water in a small bowl and let stand 5 minutes.
- Blend remaining ingredients except Herb Glaze in large bowl, stir in yeast mixture to form a soft dough.
- Turn dough out onto floured surface. Knead dough 5 minutes until smooth and elastic. Place dough in greased bowl; cover and let rise in warm place for 1 hour.
- Grease baking sheet. Punch dough down, divide evenly into 6 pieces. Shape each piece into 5-inch circle; place on baking sheet. Cover, let rise 20 minutes.
- Heat oven to 400F. Brush top of foccacia with Herb Glaze. Bake 15-18 minutes until light golden brown.
- For the Herb Glaze: Mix 1 Tbsp chopped fresh or 1/2 tsp dried thyme leaves, 1 Tbsp chopped fresh or 1/2 tsp dried basil leaves and 1 beaten egg.
