Honeyed Carrots
Serves: 4-6
Ingredients
1 tablespoon butter
1 pound carrots, peeled, trimmed and cut into 1/4-inch rounds
1 Tablespoon brown sugar
1/2 cup orange juice
1 Tablespoon honey
2 medium scallions, chopped
Salt and freshly ground pepper
1/2 cup peanuts, finely chopped
Method
- In medium frying pan over medium-high heat with melted butter, add carrots and brown sugar. Cook, stirring. Add the orange juice and honey. Turn to high heat. Let boil approximately 4 minutes.
- Reduce the heat to low, add scallions and cook for an additional 2 minutes until carrots are crisp-tender.
- Season with salt and pepper to taste. Sprinkle with chopped nuts and serve immediately.
