Easy Apple Muffins
Serves: 6-8
Ingredients
3 cooking apples
8 oz plain flour
1 tsp baking powder
3 oz lard
2 oz sugar
1 egg
A little milk
Butter and sugar to serve
Method
- Peel, core and chop the apples finely.
- Mix the flour and baking powder together. Rub in the fat, add the sugar and the chopped apples, and bind to a soft dough with egg, adding a little milk if necessary.
- Knead lightly and roll out three quarter inch thick on floured board. Cut into 2 inch rounds, using a fancy cutter, and bake in a moderate oven, 350F for 30 minutes.
- While still hot, split open and spread generously as possible with butter, then sprinkle with sugar.
