Easy Apple Muffins

Serves: 6-8


Ingredients

3 cooking apples
8 oz plain flour
1 tsp baking powder
3 oz lard
2 oz sugar
1 egg
A little milk
Butter and sugar to serve


Method

  1. Peel, core and chop the apples finely.
  2. Mix the flour and baking powder together. Rub in the fat, add the sugar and the chopped apples, and bind to a soft dough with egg, adding a little milk if necessary.
  3. Knead lightly and roll out three quarter inch thick on floured board. Cut into 2 inch rounds, using a fancy cutter, and bake in a moderate oven, 350F for 30 minutes.
  4. While still hot, split open and spread generously as possible with butter, then sprinkle with sugar.
