Italian Cheesecake

Ingredients

5 pounds of ricotta cheese
2 cups of sugar
1 1/2 cups flour
6 eggs
2 tablespoons vanilla
3 teaspoons anisette
1 jar citron fruit
1 teaspoon butter
1 box graham cracker crumbs


Method

  1. Mix all the ingredients together except the graham cracker crumbs until smooth.
  2. Grease a 10x14 pan and sprinkle 3/4's of the cracker crumbs evenly. Pour mixture on top of the crust and spread evenly.
  3. Sprinkle the remaining crumbs on top.
  4. Bake at 400 degrees for 1 1/2 hours. Remove from oven and scrape the sides of the pan with a butter knife; let cool on the counter for 3 hours.
  5. Place on a dish after cooled and place in the fridge overnight; slice and serve when ready to eat.
