Jicama-melon Salsa

Serve with grilled fish or chicken

Serves: 6-8


Ingredients

1 small mango, peeled, pitted
1 chili serrano, seeded
1 lime, juiced
1 1/2 tablespoons bell pepper, red, diced
1/2 cup cantaloupe, diced
1/2 cup honeydew melon, diced
2 tablespoons cucumber, peeled, diced
1/2 cup jicama, peeled, diced
2 teaspoons cilantro, chopped
1/4 teaspoon salt
1/4 teaspoon pepper, black
2 tablespoons sour cream


Method

  1. In a food processor or blender, puree lime juice, mango and chile. Place diced vegetables and fruit in a mixing bowl, add puree and combine.
  2. Mix in cilantro, salt and pepper. Adjust seasonings to taste.
  3. Gently fold in sour cream.
