Lemon Curd
I usually make my curd with orange juice but lemon works also
Serves: 6-8
Ingredients
4 large eggs
1 cup granulated sugar
1/2 cup lemon juice (use only fresh) orange or lime may also be used
1 Tbsp grated peel
1/2 cup unsalted butter
Method
- Beat the eggs until light in color then mix in sugar, juice and peel.
- Put mixture into a double boiler with the water at a gentle simmer-add the butter and whisk constantly until the curd becomes thick like mayonnaise. Cool and chill.
