Lobster Newburg
Serves: 4
Ingredients
A 2 lbs boiled lobster
1/4 cup unsalted butter (clarified)
1 or 2 Tablespoons Sherry
Pinch of fresh grated nutmeg
1/8 teaspoon paprika
1/2 teaspoon salt
Pinch of cayenne
1/3 cup Half & Half or cream
Yolks of 2 large fresh eggs, slightly beaten
2 tablespoons brandy (for flaming if desired)
Method
- Remove cooked lobster meat from shell and cut into slices. Melt butter, add lobster, and cook three minutes.
- Add seasonings and wine, cook one minute, then stir in cream and yolks of eggs (slightly beaten). Stir until thickened. Serve with toast triangles
