Lobster Newburg

Serves: 4


Ingredients

A 2 lbs boiled lobster
1/4 cup unsalted butter (clarified)
1 or 2 Tablespoons Sherry
Pinch of fresh grated nutmeg
1/8 teaspoon paprika
1/2 teaspoon salt
Pinch of cayenne
1/3 cup Half & Half or cream
Yolks of 2 large fresh eggs, slightly beaten
2 tablespoons brandy (for flaming if desired)


Method

  1. Remove cooked lobster meat from shell and cut into slices. Melt butter, add lobster, and cook three minutes.
  2. Add seasonings and wine, cook one minute, then stir in cream and yolks of eggs (slightly beaten). Stir until thickened. Serve with toast triangles
