Low Carb Grilled Eggplant

Tomato can be used instead of the red pepper.

Ingredients

1 large eggplant
8 oz. goat cheese
4 Tbsps Olive oil
1 Tbsps Balsamic vinegar
2 Tbsps Roasted red pepper (from a jar, patted dry)


Method

  1. Slice eggplant to 1/4" rounds, about 16. Brush olive oil mixed with the vinegar over each slice.
  2. Place oiled side on grill, top with 1 oz. Goat cheese and red pepper. Top with another eggplant slice and brush with the olive oil mixture. Then grill for about 8 mins. each side.
