Low-Carb Shepherd's Pie

Add sour cream to the cauliflower mash, for a nice variation. This can be made ahead and refrigerated or frozen.

Ingredients

1 Head Cauliflower
1 Lb Leftover meat (Hamburger, steak, ribs, porkchops are all good)
1 Can (14.5oz) French Cut Green Beans
8 oz Shredded Cheese


Method

  1. Steam or boil Cauliflower, drain then add butter and mash as you would potatoes. Add salt and pepper to taste. Layer half the mashed cauliflower in a 13x9x2 inch pan.
  2. Add cubed leftover meat, green beans or your favorite LC veggies and about 6 oz of the shredded cheese. Spoon the rest of the mashed cauliflower next and top with the rest of the cheese.
  3. Bake at 350 for approximately 30 minutes or until the cheese is melted.
  4. 4 cups mashed cauliflower = 8 carbs, 1 Can French Cut Green Beans = 7 carbs, 8 Oz Shredded Cheese = 8 Carbs, Total Carbs for the whole Dish = 23 Carbs divided by six servings = 4 carbs each
