Margarita Chicken

Tip: crumble tortilla chips in a blender.

Ingredients

4 Boneless chicken breasts
2 Tbsps Cooking oil
2 Tbsps Lime juice
1 Tbsp Honey
1 cup Tortilla chips, crushed
1 can (14 oz) Mexican style stewed tomatoes
2 Tbsps chopped cilantro
1/3 cup grated Jack cheese


Method

  1. Brush chicken breasts with mixture of oil, lime juice, and honey, then roll in tortilla chips
  2. Bake 20 - 25 minutes at 350F.
  3. While chicken is baking, puree tomatoes and cilantro into a sauce. Remove chicken from oven, top with puree, and sprinkle with cheese. Bake again for 5 more minutes or until cheese melts.
