Monterey Cheese Fondue
Serve, as with any fondue, with French bread cubes and julienned vegetables.

Ingredients
1 clove Garlic, halved
1 cup Monterey jack cheese, shredded
2 cups dry white wine
1 tablespoon dry mustard
1/8 teaspoon salt
1/8 teaspoon pepper
2 teaspoons cornstarch
2 tablespoons water
1 teaspoon lemon juice
1 French bread loaf, cubed
Raw vegetables - carrots, celery, etc
Method
- Rub bottom and sides of a heavy 3 quart saucepan with garlic; discard garlic add cheese, wine, mustard, salt and pepper.
- Cook over medium heat, stirring constantly, until cheese melts and mixture is blended.
- Mix cornstarch and water until smooth. stir into cheese mixture; add lemon juice.
- Bring to boil over medium heat, stirring constantly; boil 1 minute. Pour into fondue pot over low heat.
