Monterey Jack Bread Pudding

Ingredients

3/4 cup light brown sugar
1 1/2 cups water
1 stick cinnamon
1 whole clove
3 cups white bread cubes, toasted
3 cups apples, peeled and thinly sliced
3 cups seedless raisins
1/2 cup blanched almonds, chopped
1 cup shredded monterey jack cheese


Method

  1. For syrup, combine sugar, water, cinnamon and clove. Bring to a boil and simmer 15 minutes; set aside.
  2. Cover bottom of a buttered 2-quart casserole with a layer of toasted cubes; add a layer each of apples, raisins, almonds and cheese. Repeat until all ingredients are used, reserving 1/4 cup cheese.
  3. Remove cinnamon and clove from syrup; pour syrup over all.
  4. Cover casserole; bake in preheated 350F oven for 30 minutes.
  5. Uncover; sprinkle with reserved cheese. Bake an additional 15 minutes; serve hot.
