Mussels and Pasta

Ingredients
2 Garlic cloves, minced
2/3 lb Basil & Garlic Rotini or Red Green Linguini
1/4 teaspoon Red dried chilies
pinch Cayenne pepper
2 teaspoons Olive oil
1 Sweet red bell pepper, finely diced
1/2 cup white wine (or apple juice)
4 Tablespoons soft cream cheese
30 mussels, in shells
2 green onions, sliced
2 Tablespoons fresh parsley, chopped
Method
- Saute garlic, onion, chilies & cayenne in olive oil in a large deep pan for 2 minutes, or onion is soft. Add the red pepper.
- Bring a large pot of salted water to boil and cook Rotini for 3 minutes. Drain, then set aside. Saute for 2 minutes, and then stir in wine & cream cheese. Bring this mixture to a boil, then add the mussels.
- Cover and cook for 3 minutes until the shells are open. Add the cooked pasta, green onion & parsley, stir gently until the pasta has reheated - about 1 minute. Discard any mussels that remain closed. Serve immediately, with a fresh green salad & white wine.
