Nutty Couscous
Couscous is semolina grain that has been rolled, dampened and coated with fine wheat flour. Couscous works well with a number of complementary ingredients such as tomato, peppers, herbs, pesto, etc.
Serves: 4
Ingredients
1 3/4 cups chicken broth
1 cup couscous
1/3 cup toasted walnuts, chopped
2 Tablespoons finely diced red bell pepper
1 Tablespoon Italian parsley
Salt and Pepper, to taste
Method
- Bring chicken broth to a boil in a small saucepan. Add remaining ingredients, and stir to blend. Cover and remove from heat.
- Let stand for 10 minutes or until all the liquid has been absorbed. Fluff with a fork before serving.
