Oyster Russian

Serves: 6-8


Ingredients

2 dozen freshly opened oysters
1 small tub of sour cream
1 lemon
2 small jars of caviar or fish roe (red/black or orange preferably)


Method

  1. Juice the lemon and mix with sour cream. Place 1 teaspoon sour cream onto each oyster and top with 1/2 teaspoon caviar using two colors for contrast.
