Pecan Pie

The classic - pies are ready when they puff up and resemble a souffle. They will deflate as they cool and firm up for slicing.

Ingredients

2 2/5 cups clear Karo syrup
61/2 ounces light brown sugar
2/5 cup maple syrup
8 eggs
1/5 cup melted butter or butter-flavored oil
2 tablespoons vanilla
4 cups chopped pecans
3/4 teaspoon salt
4 tablespoons cornstarch, dissolved


Method

  1. Beat eggs, brown sugar, butter and flavor until sugar is dissolved and mix is well blended. Add syrups, salt and cornstarch; mix well.
  2. Place 2 cups chopped pecans in each 9-inch deep dish pie shell, unbaked. Fill with mix and bake in a 300- to 325-degree oven for 1 hour to 1 hour 10 minutes. Cooking time and temperature may vary depending on the stove, so check after 45 minutes.
