Pecos Pork Chops

Ingredients

1 lb pork chops
1 cup tomato sauce
3 Tbsps chili sauce
1 1/4 Tbsps Worcestershire sauce
1 1/2 Tbsps lemon juice
2 tsp Dijon mustard
1/2 tsp paprika
1/8 tsp ground cumin
salt and pepper to taste


Method

  1. Arrange pork chops in a single layer in medium/large baking dish. Combine remaining ingredients; pour over chops.
  2. Cover; refrigerate at least 4 hours or overnight.
  3. Remove chops from marinade; grill over medium/high heat until done or bake chops, covered, for 1 hour at 325F until done.

I made this the other night and no one was too pleased. The marinade just seemed really bland and I had to add seasonins to perk it up. On the bright side, the chops were extremely tender and delicious.
