Potato Pancakes 2

Use your favorite egg substitute and fry the pancakes in non-stick spray, for a healthier option.

Serves: 4


Ingredients

3 Tbsps finely chopped onion
1/3 cup butter
4 cups cooked mashed potatoes
2 eggs, beaten
1/2 cup flour


Method

  1. Cook onion in pan in about half of the butter until translucent. Remove onion from pan with a slotted spoon, allow the pan dripping to remain in the pan.
  2. Combine onion, mashed potatoes and egg. Sprinkle with flour.
  3. Add remaining butter to pan and heat over medium heat. Add potato pancakes and cook about 6 minutes each side until browned.
