Rancho Mashed Potatoes
9 peeled medium potatoes
1 clove garlic
1/4 cup melted butter or margarine
2 egg yolks
1/2 cup heavy cream
1/2 tsp salt
1/4 tsp pepper
4 oz can sliced mushrooms
2 Tbsps butter or margarine
1/4 cup chopped parsley
- Cook potatoes with garlic clove until tender. Drain and remove garlic.
- Mash potatoes with butter (1/4 cup). Blend in yolks, cream, salt, and pepper.
- Cook mushroooms in 2 Tbsps butter - add with parsley to potatoes and mix.
- Place in a 3 quart casserole oven dish and bake at 375 F for 35 minutes.
