Roast turkey breast
Serves: 8-12
Ingredients
4 to 8 lb bone-in turkey breast
1 Tbsp vegetable oil
2 Tbsps dried parsley flakes
1 Tbsp dried sage
1 tsp each dried marjoram, thyme and rosemary
1 tsp seasoned salt
Method
- Preheat oven to 325 degrees F. Line a roasting pan, at least 2 inches deep, with heavy duty aluminum foil.
- Rinse turkey breast, pat dry. Place breast in foil lined pan, brush with oil.
- Combine spices and seasonings, and sprinkle and rub mixture over breast, turning to coat evenly.
- Make a foil tent by placing a sheet of foil over turkey breast, leaving 1 inch between top of breast and foil tent for heat circulation. Crimp foil onto long sides of the pan.
- Bake 1 hour, remove tent to brown breast.
- Continue baking uncovered 1 to 1 3/4 hours longer or until meat thermometer inserted in thickest part of the meat (not touching the bone) reads 170 degrees.
