Roast turkey breast

Serves: 8-12


Ingredients

4 to 8 lb bone-in turkey breast
1 Tbsp vegetable oil
2 Tbsps dried parsley flakes
1 Tbsp dried sage
1 tsp each dried marjoram, thyme and rosemary
1 tsp seasoned salt


Method

  1. Preheat oven to 325 degrees F. Line a roasting pan, at least 2 inches deep, with heavy duty aluminum foil.
  2. Rinse turkey breast, pat dry. Place breast in foil lined pan, brush with oil.
  3. Combine spices and seasonings, and sprinkle and rub mixture over breast, turning to coat evenly.
  4. Make a foil tent by placing a sheet of foil over turkey breast, leaving 1 inch between top of breast and foil tent for heat circulation. Crimp foil onto long sides of the pan.
  5. Bake 1 hour, remove tent to brown breast.
  6. Continue baking uncovered 1 to 1 3/4 hours longer or until meat thermometer inserted in thickest part of the meat (not touching the bone) reads 170 degrees.
