Salmon Quesadillas

Serve with guacamole or salsa.

Serves: 2-3


Ingredients

2 garlic cloves, minced
1 teaspoon vegetable oil
1 14oz can salmon
1 teaspoon dried basil
1/2 teaspoon pepper
1 tablespoon butter
Flour tortillas
2 cups shredded mozzarella cheese
Guacamole or salsa


Method

  1. Saute garlic in oil until tender. Stir in salmon, basil, and pepper. Cook over medium heat until heated through.
  2. Spread butter over one side of tortilla. Place tortillas, buttered side down, on griddle.
  3. Sprinkle each with 1/2 cup cheese. Spread 1/2 cup of salmon mixture over half of each tortilla.
  4. Fold over and cook on low for 1-2 minutes on each side.
