Sour Cream Cornbread

A moist and sweet cornbread to enjoy with favorite soups or grilled pork or poultry.

Ingredients

1/4 cup butter, softened
3 tablespoons sugar
2 eggs
1/2 cup sour cream
1/2 cup milk
1 cup all-purpose flour
2/3 cup yellow cornmeal
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda


Method

  1. Heat oven to 425 degrees F.
  2. Combine butter and sugar in small bowl. Beat at medium speed, scraping bowl often, until creamy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Stir in sour cream and milk. Add all remaining ingredients.
  5. Reduce speed to low; beat just until mixed.
  6. Pour batter into greased 8-inch cast iron skillet. Bake for 22 to 26 minutes or until golden brown and toothpick inserted in center comes out clean.
